Simple Vegan Peanut Butter Cookies

You would never know these cookies are healthy, but they are, and they are also vegan. They are peanut buttery, soft and chewy on the inside, yet crispy on the outside these cookies will make your day.

Ingredients
  

  • 2 flax eggs 2 tablespoons ground flax combined with 6 tablespoons of water
  • 1/2 cup all purpose flour
  • 1/2 cup oat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons brown sugar
  • 2 tablespoons pure cane sugar
  • 1/2 cup creamy peanut butter
  • 1/2 cup oat milk

Instructions
 

  • Preheat oven to 350 degrees F.
  • Make flax eggs and set aside.
  • Mix all dry ingredients in a medium sized mixing bowl, until combined.
  • Add the peanut butter, oat milk and flax eggs to the dry ingredients. Mix with a spatula until the mixture becomes creamy and fluffy.
  • Make nine balls of dough, place onto the cookie sheet and flatten.
  • Bake for 12 minutes or until golden brown.
  • Allow to cool for at least ten minutes before serving.
