Vegan Broccoli Cheddar “Cheese” Rice

Ingredients
  

  • 2 cups basmati rice uncooked
  • 2 cups broccoli chopped
  • 2 cups plant-based milk unsweetened, unflavored
  • 4 tablespoons vegan butter
  • 2 teaspoons garlic powder
  • 1/2 teaspoon salt
  • 2 cups nutritional yeast

Instructions
 

  • Chop broccoli.
  • Cook rice according to package instructions.
  • Add the chopped broccoli to the rice after it is done cooking. Set aside.
  • Whisk all other ingredients in a small saucepan over low heat. Once combined and heated through, add to the rice and broccoli.
  • Serve as is or pour into a casserole dish, top with breadcrumbs, and bake for 15 minutes.
