Vegan Healthy Ricotta "Cheese"

It can be expensive to buy vegan cheese, so I like to make my own. This ricotta is made from vegeatbles and so healthy, yet you won't even know that it isn't real ricotta. It is so easy to make and budget friendly.

Ingredients
  

  • 12 ounce package frozen riced cauliflower
  • 3/4 cup roasted garlic hummus or plain hummus
  • 3/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic powder

Instructions
 

  • Cook riced cauliflower according to the package.
  • Add the cauliflower, along with all other ingredients to a high speed blender and pulse a few times, until the texture resembles ricotta.
  • Store in the refrigerator up to 7 days.
  • Use as a dip, make lasagna, put on pizza, add to any pasta dish. Enjoy!
