Vegan Tomato Rice Soup for Kids

A simple vegan tomato rice soup made with onions, celery, broth, tomatoes, and tender rice. This comforting, one-pot recipe uses familiar ingredients to create a smooth, savory soup that’s easy to make and perfect for everyday meals.

Ingredients
  

  • 1 cup long grain white rice uncooked
  • 1 large yellow onion diced small
  • 6 medium celery ribs diced small
  • 2 tablespoons olive oil
  • 6 cups vegetable broth
  • 15 ounce can crushed tomatoes unsalted
  • saltine crackers optional topping

Instructions
 

  • Make the rice according to package instructions. Set aside.
  • Heat the olive oil in a saute pan over low heat. Add the diced onion and celery and heat until soft and frgrant.
  • In a large pot, add the vegetable broth, crushed tomatoes, cooked rice, and sauteed onion and garlic. Bring to a boil and then allow to simmer covered for ten minutes until heated through.
  • Serve while hot with Saltine crackers for crumbling, if using. Enjoy!
