Vegan Tomato Rice Soup for Kids

A simple vegan tomato rice soup made with onions, celery, broth, tomatoes, and tender rice. This comforting, one-pot recipe uses familiar ingredients to create a smooth, savory soup that’s easy to make and perfect for everyday meals.

- 1 cup long grain white rice uncooked
- 1 large yellow onion diced small
- 6 medium celery ribs diced small
- 2 tablespoons olive oil
- 6 cups vegetable broth
- 15 ounce can crushed tomatoes unsalted
- saltine crackers optional topping
Make the rice according to package instructions. Set aside.
Heat the olive oil in a saute pan over low heat. Add the diced onion and celery and heat until soft and frgrant.
In a large pot, add the vegetable broth, crushed tomatoes, cooked rice, and sauteed onion and garlic. Bring to a boil and then allow to simmer covered for ten minutes until heated through.
Serve while hot with Saltine crackers for crumbling, if using. Enjoy!
