Simple Vegan Peanut Butter Cookies
Ingredients
- 2 flax eggs 2 tablespoons ground flax combined with 6 tablespoons of water
- 1/2 cup all purpose flour
- 1/2 cup oat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons brown sugar
- 2 tablespoons pure cane sugar
- 1/2 cup creamy peanut butter
- 1/2 cup oat milk
Instructions
- Preheat oven to 350 degrees F.
- Make flax eggs and set aside.
- Mix all dry ingredients in a medium sized mixing bowl, until combined.
- Add the peanut butter, oat milk and flax eggs to the dry ingredients. Mix with a spatula until the mixture becomes creamy and fluffy.
- Make nine balls of dough, place onto the cookie sheet and flatten.
- Bake for 12 minutes or until golden brown.
- Allow to cool for at least ten minutes before serving.
