Ingredients

  • 2 flax eggs 2 tablespoons ground flax combined with 6 tablespoons of water
  • 1/2 cup all purpose flour
  • 1/2 cup oat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons brown sugar
  • 2 tablespoons pure cane sugar
  • 1/2 cup creamy peanut butter
  • 1/2 cup oat milk

Instructions

  • Preheat oven to 350 degrees F.
  • Make flax eggs and set aside.
  • Mix all dry ingredients in a medium sized mixing bowl, until combined.
  • Add the peanut butter, oat milk and flax eggs to the dry ingredients. Mix with a spatula until the mixture becomes creamy and fluffy.
  • Make nine balls of dough, place onto the cookie sheet and flatten.
  • Bake for 12 minutes or until golden brown.
  • Allow to cool for at least ten minutes before serving.
