Buttery Vegan Biscuits That Save the Day (and Your Sanity!)
super easy
Let me tell you something… I make a ton of new recipes each week. Some are winners, some are meh, and some? Complete disasters. And when a recipe flops, guess who ends up scrambling to feed my kid? Yep. Me. Fast. Hungry. Slightly panicked.
Enter these biscuits. My weekend batch makes the entire week feel like a win. Two biscuits, a giant bowl of veggies, and boom — dinner is saved. My son’s happy, I’m happy, and nobody’s hangry.

But Seriously … These Biscuits Are Magic
Fluffy on the inside, golden and just slightly crispy on the outside, buttery, comforting… basically everything you want in a biscuit. I pile a little butter on top (don’t judge), because yes — comfort food deserves to be indulgent.
Not a butter fan? No problem. I get my buttery fix from coconut oil from Thrive Market. It’s vegan, ridiculously tasty, and makes you feel fancy while keeping it simple. (Side note: Thrive Market is basically my happy place for pantry staples and vegan goodies I didn’t even know I needed).
And let me tell you — these biscuits are flexible. You can make them herby with rosemary or thyme for dinner, add a little garlic powder to pair with soups and stews, or keep them simple and sweet with a smear of jam for breakfast.
Why I Make These All the Time
Here’s the truth — I try new recipes constantly. Sometimes they fail. Sometimes my kid refuses them. And sometimes I’m left staring at a half-cooked disaster thinking, “What now?“
These biscuits fix all of that. Make a batch, store them in the fridge or freezer, and you’re basically a superhero on standby. No stress, no scrambling, no sad, empty stomachs. Just buttery, fluffy, golden happiness ready to rescue any meal.
Storage tips:
- Fridge: Store in an airtight container for up to a week.
- Freezer: Freeze baked or unbaked biscuits for up to a month. Bake or reheat straight from the freezer when needed.
- Reheating: Warm in the oven for 5–10 minutes, or use a toaster oven for a quick fix. Pro tip: brush with a little vegan butter before reheating for extra indulgence.
Perfect For… Everything
- Soup nights: Dunk, pull apart, repeat — the edges soak up all that savory goodness.
- Chili nights: Thick, cozy, and comforting; perfect for scooping or sopping up sauce.
- Holiday feasts: Thanksgiving, Christmas, or any time you want a crowd-pleaser without stress.
- Cold mornings: Warm them up with a little extra butter (or coconut oil) — perfect with coffee, tea, or hot cocoa.
- Breakfast sandwiches: Split one open and add avocado, vegan cheese, or scrambled tofu for a quick, filling meal.
- Sweet indulgence: Drizzle with maple syrup or your favorite nut-free spread for a treat that feels fancy but is super simple.
A Little Mom Humor
Even though these biscuits are meant for the family, I have a hard time stopping at just one. There’s something about stealing a warm biscuit straight from the tray that feels like a tiny indulgence, a little secret, a cozy moment in the middle of the day. And my son? He’s learned to sneak one too. It’s a quiet, delicious battle, and one of my favorite parts of making these.
Final Thoughts
These biscuits are simple, comforting, indulgent, and absolutely kid-approved. They’re my “backup plan” hero, my cozy afternoon treat, and my holiday table MVP.
Honestly? I can’t stop at one. And you probably won’t either.
So go on — make a batch. Dunk them. Slather them. Share them (or not). These biscuits are everything your fall and winter deserve. Warm, buttery, and golden — they’re basically edible hugs.
Let’s Talk Biscuit Magic …
These biscuits?
Warm. Savory. Cozy. Fluffy. Buttery.
Exactly the kind of comfort food that makes cold weather feel just a little more bearable.
I use a generous amount of vegan butter in the biscuits and on top of the biscuits — because if you’re going to do comfort food, do it right. But if you avoid palm oil (found in most vegan butters), don’t worry. My favorite swap is a buttery coconut oil I get from Thrive Market. Same indulgent flavor, none of the palm oil guilt.
If you haven’t checked out Thrive Market yet, it’s an online grocery store packed with vegan staples, pantry must-haves, and fun new finds — like that buttery coconut oil that I always keep stocked.
When We Eat These Biscuits
I’m 100% a seasonal cook, and these biscuits come out mostly in the fall and winter — with the occasional cold spring day making a surprise appearance.
Some of our favorite ways to enjoy them:
- Paired with a big, warm bowl of chili
- Alongside cozy soups (especially my veggie-loaded ones!)
- With smashed potatoes and vegan chickenless patties
- On holiday tables — Thanksgiving, Christmas, any cozy family day
Honestly, they’re the ultimate “add this to the plate and everyone’s happy” food.
Tell Me Yours!
